Peppermint Bark Fudge Cookies

2 c. All Purpose Unbleached Flour
1 t. Baking Soda
1 c. Butter
3/4 c. Brown Sugar
1/4 c. White Sugar
1 Small Package of Instant Chocolate Pudding Mix
2 Eggs
1 t. Vanilla
1 1/2 c. Chopped Peppermint Bark
1/2 c. Chopped Candy Canes

Preheat the oven for 350F. Cream the butters and sugars together. Mix together the flour, baking soda, and pudding mix in a separate bowl. Slowly add in the eggs in the butter/sugar mixture. Add in the vanilla. Slowly add in the flour mixture. When the dough is incorporated, mix in the peppermint bark and the candy canes. Roll into 1 1/2″ balls and bake for about 9-10 minutes for a chewier cookie; 8-9 minutes for a fudge-y cookie.
